Ingredients:

For the Cake:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup strong brewed espresso or coffee, cooled

For the Tiramisu Filling:

  • 8 oz mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 cup coffee liqueur (optional)
  • 1/2 cup heavy whipping cream

For Assembly and Garnish:

  • Unsweetened cocoa powder, for dusting
  • Dark chocolate shavings (optional)
  • Fresh mint leaves (optional)

Process:

  1. Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined.
  6. Divide the cake batter evenly between the prepared pans and smooth the tops.
  7. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  8. Let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
  9. In a mixing bowl, combine the mascarpone cheese, powdered sugar, vanilla extract, and coffee liqueur if using. Mix until smooth.
  10. In a separate bowl, whip the heavy whipping cream until stiff peaks form.
  11. Gently fold the whipped cream into the mascarpone mixture until you have a creamy Tiramisu filling.
  12. Once the cakes are completely cooled, slice each cake horizontally to create four cake layers.
  13. Place one cake layer on a serving plate, and brush it with the cooled brewed espresso or coffee.
  14. Spread a portion of the Tiramisu filling evenly over the first layer.
  15. Repeat the process, layering the cake and filling until all layers are used.
  16. Dust the top of the cake with unsweetened cocoa powder and garnish with dark chocolate shavings and fresh mint leaves if desired.
