Ingredients:
For the Cake:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1/2 cup buttermilk
- 1/2 cup strong brewed espresso or coffee, cooled
For the Tiramisu Filling:
- 8 oz mascarpone cheese
- 1/4 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup coffee liqueur (optional)
- 1/2 cup heavy whipping cream
For Assembly and Garnish:
- Unsweetened cocoa powder, for dusting
- Dark chocolate shavings (optional)
- Fresh mint leaves (optional)

Process:
- Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs, one at a time, followed by the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients, mixing until just combined.
- Divide the cake batter evenly between the prepared pans and smooth the tops.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
- Let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
- In a mixing bowl, combine the mascarpone cheese, powdered sugar, vanilla extract, and coffee liqueur if using. Mix until smooth.
- In a separate bowl, whip the heavy whipping cream until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture until you have a creamy Tiramisu filling.
- Once the cakes are completely cooled, slice each cake horizontally to create four cake layers.
- Place one cake layer on a serving plate, and brush it with the cooled brewed espresso or coffee.
- Spread a portion of the Tiramisu filling evenly over the first layer.
- Repeat the process, layering the cake and filling until all layers are used.
- Dust the top of the cake with unsweetened cocoa powder and garnish with dark chocolate shavings and fresh mint leaves if desired.
